You can still get both Symantec C/C++ versions 7 and 8 through various
channels (I hadn't heard that version 8 had been discontinued, maybe
someone was confused by the name change from Think to Symantec), but the
current hot tool appears to be CodeWarrior by Metrowerks
(http://www.metrowerks.com). They have an excellent academic discount
program, and now that they have their compilers integrated, a pretty nice
development environment. I think they're up to version 9 or 10 now (I have
CW8 and need to renew my subscription). When you buy CodeWarrior, you get
a subscription for the next couple of updates free, which is a nice touch.

There are several intro programming books out that contain a stripped down
verions of either Symantec or the CodeWarrior compilers. Dave Mark's books
are pretty good. The stuff from Apple (Introduction to Macintosh
Programming and Intermediate Macintosh Programming) was ok, but has been
discontinued (probably being updated for Copland).
