Server: Pentium 133 plus two 4 Gb SCSI drives duplexed (two identical drives
plus 2 identical controller cards). 64 Mb EDO ram

If you duplex the drives then if (or more likely when) one goes you will
still have everything on the second drive.

One server should be enough.

Our server was short of memory and we suffered from crashes, slow operation,
problems with CD-ROM serving.

We were also short on storage. If you get down to about 30 Mb the server
will give you a warning. Otherwise you will be continuously deleting
stuff and trying to find out what you need to delete.
