Marianne (and interested others):
In our Computer Information Technology course we use:
Microsoft Office Introductory Concepts and Techniques by Shelly, Cashman,
Vermaat published by: Boyd & Fraser / ITP. (This company has merged with
Course Technology - who also has an excellent book for Microsoft Office.)

The Shelly/Cashman series was selected because it is filled with screen
shots so the 'hesitant' adult can confirm each move that is made on the
screen. People who are more confident can quickly go through the lessons
while others can slowly work through each step. There are questions at the
end of every chapter, so one can use it in a 'homework' setting as well.

I have had very good responses from the non-traditional students who have
used the text.

One can purchase the entire book for all the Office programs or texts for
each application.
