The Institute for the Learning Sciences (ILS) at Northwestern University
has been doing great work on AI in educational software for years now.
Their address is http://www.ils.nwu.edu/. Some of their more interesting
AI-related research projects include

Creanimate (http://www.ils.nwu.edu/projects/creanimate.html)
Engines for Education (http://www.ils.nwu.edu/~e_for_e/index.html)
Evidence-Based Reporting
(http://www.ils.nwu.edu:80/~korcuska/projects/ebr/ebrhome.html)

Any many others. They're definitely worth a look.
