Two recent books, splendid in all respects, will provide you with all you
need to know together with an up to date bibliography:
Michael Perceval Maxwell, The outbreak of the Irish rebellion of 1641
(Dublin 1994)
Jane Ohlmeyer ed., Ireland from independence to occupation 1641-1660
(cambridge 1995)

If you simply want a chronologicalnarrative, try the New History of
Ireland, iii.
