The person to contact would be Donald Woodward, who is in the
Dept of Social and Economic History at the University of Hull.
He has been working for some years on a study of urban craftsmen
in early-modern Hull. He's mainly interested in building trades
but I'm sure he could put you on track for other occupations and
he certainly knows the sources.
