I am putting together a panel on Appalachian Foodways for the Southern Humanities Council's Conference and am in need of panelists.

The conference will be held on February 10-13, 2011 in Jacksonville, Florida. I am proposing a panel that will focus on Appalachian Foodways; this can include food history, consumption, distribution, preservation, production, or cookery in Appalachia. The conference prides itself on being interdisciplinary and I would like to have a good mix of presenters. Presentations will last fifteen to twenty minutes and there will be time for questions at the end of the panel.
